In a hotel built around minerals, it felt inevitable that wine, the clearest expression of soil, stone, and place, would become part of our soul too.
The Philosophy
Every wine in our cellar earns its place. We're not chasing famous labels — we're chasing honesty: producers who let their soil speak, vintages that tell a story, bottles with history in them rather than just a price tag.

Our list currently holds 160 labels and counting — from young, energetic growers working organically in South Tyrol and across Italy, to rare historic bottles, some dating back to the 1960s, kept for guests who want to taste a piece of wine history, not just drink a glass.
Curated by Our Own Sommelier
Behind the list is Noah Klement, one of the owners of Mineralienhotel and our certified sommelier. Noah trained in Copenhagen, completing the Danish Sommelier Association (DSF) program alongside WSET Level 2 and 3, before bringing that training home to build the hotel's wine program from the ground up.

Wine has always been more than a service detail for us — it's something the whole family cares about, part of how we host and how we see the hotel itself. Every bottle on our list has been personally tasted, sourced, and chosen by Noah — a reflection of that shared passion and his ongoing search for wines worth drinking.
